Raspberry Ice Box Dessert image

I just love this dessert ! I've even changed the flavor of jello and fruit. Strawberry bananna is really good.

Number Of Ingredients 9

2 pkg (3oz ea.) raspberry gelatin
2 c boiling water
3 c fresh or frozen raspberries
2 c graham crackers, crushed (32 sqrs)
1/4 c brown sugar, firmly packed
1/2 c butter or margarine ; melted
1 1/2 c cold milk
1 pkg vanilla instant pudding mix (3.5oz)
1 pkg cream cheese ; room temp.

Steps:

  • 1. In a bowl combine the water and gelatin ; stir until dissolved.
  • 2. Fold in the raspberries ; refrigerate for 1 hr. or until syrupy.
  • 3. In a small bowl combine the cracker crumbs , brown sugar and butter. Press into a buttered 13x9x2" dish.
  • 4. In a mixing bowl beat the milk and pudding mix on low speed for 2 min.
  • 5. In another mixing bowl beat cream cheese until smooth ; Gradually add pudding.
  • 6. Spread mixture over crust ; Spoon gelatin mixture on top pudding mixture. Chill until set.
