REALLY EASY CHEESY POTATOES image

This lovely dish is from Kraftrecipes.com, as well as the beautiful picture! I have borrowed it and tweaked it to suit my personal tastes. This is a possibility for my family's Christmas dinner.

Number Of Ingredients 5

1 lb baking potatoes (about 3, cut into 1/2" chunks)
1/2 lb (8 oz.) velveeta, cut into 1/2" cubes
1/2 c chopped onions
1/4 c sour cream
4 slice bacon, cooked, crumbled

Steps:

  • 1. In an 8-inch baking dish sprayed with cooking spray, mix all ingredients except bacon. Cover.
  • 2. Bake for about 45 minutes in a preheated 375-degree oven. Top with bacon; bake, uncovered another 5 to 10 minutes or until potatoes are tender.
  • 3. NOTE: May substitute Mayonnaise for the sour ceam--or even cream cheese! Yummy!

This recipe is a keeper! The potatoes were fluffy and the cheese sauce was rich and cheesy. I will definitely be making this again.

So easy to make and so delicious! I used sharp cheddar cheese and it gave the dish a nice tang. My kids loved it and so did I. Definitely recommend!
