This salad is a great way to use up leftover roasted beets. It's also a great option for a light and healthy lunch or dinner. I would definitely recommend it!

Loved this salad! The roasted beets were perfectly tender and the goat cheese added a nice creamy texture. I used a balsamic vinaigrette instead of the honey mustard dressing and it was still delicious.

Easy to make and so delicious! The roasted beets give it a slightly sweet flavor that pairs perfectly with the tangy goat cheese. I also added some crumbled bacon for an extra savory touch. Will definitely be making this again.

This salad is a delightful explosion of flavors and textures. The combination of sweet roasted beets, tangy goat cheese, and crunchy walnuts is simply divine. I followed the recipe exactly and it turned out perfectly. The dressing is also a winner, w
