Rhubarb Crisp for the Microwave image

Another yummy rhubarb recipe from my mom, Rosanne.

Number Of Ingredients 8

6 c rhubarb, cut up
1 1/2 c sugar
6 Tbsp flour
1/2 c margarine, softened
1/2 c flour
3/4 c brown sugar, firmly packed
1 tsp cinnamon
1 c quick oatmeal

Steps:

  • 1. Mix the first 3 ingredients in glass casserole or cake pan that will fit in your microwave. Use glass dish (Mom used to use a Corning Ware 2 inch deep large dish). Cook on high for 3 minutes, rotate dish - unless you have a turntable. Then cook for 3 more minutes on high. While that is cooking, stir together margarine, flour, brown sugar, cinnamon, and quick oatmeal. Mix well and put on top of rhubarb mixture. Microwave on high for 10 minutes - rotating once if you do not have a turntable.

I'm not a big fan of rhubarb, but I really enjoyed this crisp. The topping was so good that it made me forget all about the rhubarb.

This crisp is a bit tart, but I like that. If you prefer a sweeter crisp, you can add more sugar to the filling.
