Yield Serves 8 as a first-course or side, 4 as main dish

Number Of Ingredients 7

1 pound spicy Italian sausages, casings removed
1 1/2 cups chopped onion
2 large garlic cloves, chopped
1 1/4 cups medium-grain white rice (such as blue rose)
4 to 5 cups canned low-salt chicken broth
1 1/4 cups grated Parmesan cheese
1/2 cup chopped fresh Italian parsley

Steps:

  • Sauté sausage, onion and garlic in heavy large saucepan over medium heat until onion is tender, breaking up sausage with spoon, about 8 minutes. Add rice and stir 1 minute. Add 4 cups broth. Reduce heat to medium-low and simmer until broth is absorbed, stirring frequently, about 15 minutes. Continue to simmer until rice is just tender and mixture is creamy, adding more broth 1/4 cup at a time and stirring frequently, about 6 minutes longer. Mix in 1/4 cup cheese and 1/4 cup parsley. Season with salt and pepper.
  • Transfer risotto to large bowl. Sprinkle with remaining 1/4 cup parsley. Pass remaining 1 cup cheese separately.

This risotto is the perfect comfort food. It's creamy, cheesy, and so flavorful. I love serving it with a side of grilled vegetables.

I'm not sure what I did wrong, but my risotto came out soupy. I think I added too much liquid.

This is my go-to risotto recipe. It's always a crowd-pleaser and I love that I can make it ahead of time.

This risotto was okay, but I've had better. The rice was a little too al dente for my taste and the flavors were not as rich as I expected.

I love this recipe! It's so easy to make and always turns out delicious. I usually add some chopped sun-dried tomatoes to give it an extra boost of flavor.

This risotto was a disappointment. The rice was overcooked and the flavors were bland. I won't be making this recipe again.

I'm not a big fan of risotto, but this recipe changed my mind. It was creamy, flavorful, and had just the right amount of spice. I'll definitely be making this again.

This risotto was a bit too spicy for my taste, but I still enjoyed it. I think next time I'll use a milder sausage.

This recipe is a keeper! I've made it twice now and both times it was a hit with my family and friends. The risotto is creamy and flavorful, and the sausage adds a nice spicy kick.

I followed the recipe exactly and the risotto came out bland and mushy. I'm not sure what went wrong.

This was my first time making risotto and I'm so glad I tried this recipe. It turned out amazing! The rice was cooked perfectly and the flavors were spot on. I will definitely be making this again.

This risotto was incredibly delicious! The combination of spicy sausage, creamy arborio rice, and flavorful vegetables was just perfect. I especially loved the hint of heat from the sausage, which added a nice kick to the dish. Overall, this is a mus
