Roasted Potatoes, Leeks and Cabbage image

Plain old cabbage becomes a delight when roasted alongside potatoes and leeks. Roasting vegetables has become increasingly popular, because it really turns the ordinary into the extraordinary. The leeks really add a mild onion flavor to make this dish extra-tasty. Sometime, I also throw in some baby carrots too.

I love how easy this dish is to make. I simply tossed the vegetables with olive oil, salt, and pepper, and then roasted them in the oven. The balsamic vinegar glaze is also very easy to make, and it really adds a lot of flavor to the dish.

I'm not a big fan of cabbage, but I really enjoyed this dish. The roasting process mellowed out the cabbage flavor and made it much more palatable. I will definitely be making this dish again.

This is a great recipe for a healthy and flavorful side dish. The vegetables are roasted until they are tender and slightly caramelized, and the balsamic vinegar adds a nice tang. I served it with a grilled salmon fillet and it was a delicious meal.

This dish is a great way to sneak some vegetables into your kids' diet. My kids loved the roasted potatoes and leeks, and they didn't even notice the cabbage. I served it with a side of ketchup and they gobbled it up.
