Steps:
- Preheat oven to 400 in a large bowl, toss the carrot with 1 tbls of the OO and sprinkle with some S&P Arrange the carrots on the large baking sheet and roast on the bottom rack for 5 mins. Toss the beets w/ 1 tbls of OO and sprinkle with S&P. Arrange the beets on a seperate baking sheet, sprinkle with some water, and roast on the bottom rack for 15-20 mins, until caramelized, flipping 1 or 2 times to prevent from burning Toss the remaining vegetable w/ the remaining 2 tbls of OO and sprinkle w/ S&P. Addthis mixture to the baking sheet with the softened carrots. Roast all of these vegetables together for 10-15 mins, until caramelized, flipping 1-2 times to prevent from burning.
