Rutabaga and Potato Salad image

Peel away the tough exterior of a rutabaga to discover a hearty, firm flesh that's tasty and filling. In addition to this light potato salad, add rutabagas to rustic vegetable soups, or roast them along with other root vegetables such as carrots, turnips, and parsnips.

Time 25m

Number Of Ingredients 7

1 rutabaga (about 1 pound), peeled and cut into chunks
1 pound red new potatoes, scrubbed, halved, or quartered (the same size as cut rutabaga)
2 tablespoons white-wine vinegar
1 tablespoon Dijon mustard
Coarse salt and ground pepper
2 tablespoons olive oil
2 ribs celery, halved lengthwise and sliced crosswise plus 1/4 cup coarsely chopped celery leaves

Steps:

  • Set a steamer basket in a large saucepan. Fill with enough water to come just below basket. Bring to a boil; place rutabaga in basket, and reduce heat to medium. Cover and steam 5 minutes. Add potatoes, cover, and steam until vegetables are just tender, about 15 minutes.
  • Meanwhile, in a large bowl, whisk together vinegar and Dijon; season with salt and pepper. When potatoes are cooked, transfer to bowl with vinegar mixture. Toss to combine; let cool, tossing occasionally.
  • When potato mixture is cool, mix in oil, celery, and celery leaves; season with salt and pepper.

This salad is a great way to get your kids to eat their vegetables. My kids love the roasted potatoes and rutabagas, and they don't even realize they're eating healthy.

I'm not a huge fan of rutabagas, but I really enjoyed this salad. The roasting process mellowed out the flavor of the rutabagas and the dressing was delicious.

This salad is a great make-ahead dish. I like to make it the night before and let it chill in the fridge overnight. The flavors really meld together and it tastes even better the next day.

This salad is a bit too heavy for my taste. I think I'll try a lighter dressing next time.

This salad is a great way to use up leftover vegetables. I always have a few stray potatoes and rutabagas lying around, and this salad is a great way to use them up.

This salad was just okay. The rutabagas were a bit too bitter for my taste, and the dressing was a bit too bland. I think I'll stick to my usual potato salad recipe.

I'm always looking for new ways to use rutabagas, and this salad is a great option. The rutabagas and potatoes roasted up beautifully, and the dressing was a perfect complement. I'll definitely be making this again.
