I love that these tacos can be made ahead of time. I often make a batch on the weekend and then reheat them during the week for breakfast or lunch.

These tacos were a great way to use up leftover eggs. I had a dozen eggs that were about to go bad, so I made a batch of these tacos.

I made these tacos in a hurry and they turned out great! I didn't have time to chop the onions, so I just used onion powder.

These tacos were a little too greasy for me. I think I'll drain the sausage more next time.

I'm not a fan of cilantro. I picked it off the tacos before I ate them.

I forgot to add the cheese. The tacos were still good, but they would have been better with cheese.

I accidentally used too much chili powder. The tacos were way too spicy!

I made these tacos with ground turkey instead of sausage. They were still delicious, but they didn't have as much flavor.

I had a hard time finding chorizo sausage, but I finally found some at a Mexican grocery store. The tacos were worth the effort.

I'm not a big fan of sausage, but I really enjoyed these tacos. The eggs and cheese balanced out the flavor of the sausage.
