Sausage and Ham Steak Chili image

This variation on chili with ham steak provides a nice alternative to the traditional chili that has been all but perfected by this point. Serve over cooked rice.

2 (15 ounce) cans black beans, drained
1 pound smoked sausage, cut into 1-inch pieces
1 pound ham steak, cut into 1-inch pieces
1 (15 ounce) can red beans, drained
1 (15 ounce) can pinto beans, drained
1 ½ cups chopped onions
1 ½ cups chopped green bell pepper
1 ½ cups chopped celery
1 cup water
1 (8 ounce) can tomato sauce
4 cloves garlic, chopped
1 cube chicken bouillon
2 teaspoons thyme leaves
1 ½ teaspoons oregano leaves
1 ½ teaspoons ground white pepper
½ teaspoon cayenne pepper
5 bay leaves
¼ teaspoon ground black pepper

Steps:

  • Combine black beans, sausage, ham, red beans, pinto beans, onions, green bell pepper, celery, water, tomato sauce, garlic, bouillon, thyme, oregano, white pepper, cayenne pepper, bay leaves, and black pepper in a slow cooker. Cover with the lid and cook on Low until thickened, about 8 hours. Remove bay leaves before serving.
