SAVORY SWEET POTATO KUGEL image

2 1/2 lbs sweet potatoes
4 tbl vegetable oil
2 onions, chopped
1/2 tsp ground ginger
salt and pepper to taste
2 eggs, beaten

Steps:

  • pierce, microwave the sweet potatoes, let cool peel, mash put chopped onion into bowl with oil, microwave until starting to brown-use 1 minute timing, mix after each minute pour into pan, bake 350 1 hour
