SCRAMBLED EGGS WITH PROCIUTTO AND SHRIMP image

Number Of Ingredients 8

4 Tbls olive oil
1 lb assorted mushrooms sliced
8 oz uncooked large shrimp, peeled, deveined, halved lengthwise
8 large eggs beaten to blend
2 oz sliced prosicutto, chopped
4 oz thinly sliced smoked salmon cut into strips
8 slices bread, toasted, cut into wedges
Chopped fresh parsley(optional)

Steps:

  • Heat 2 tablespoons oil in heavy large skillet over medium heat. Add msuhrooms to skillet. Cover and cook until mushrooms are tender, stirring occasionally, about 12 minutes. Meanwhile, heat 2 tablespoon oil in large nonstick skillet over medium high heat. Add shrimp to skillet and saute until almost opaque, about 2 minutes. Add eggs and stir until about set, about 4 minutes. Add prociutto and sit until eggs are set, about 1 minute. Spoon egg mixture onto platter. Tope with salmon strips. Surround with mushrooms and toast. Garnish with parsley if desired.
