Shrimp-And-Pasta Salad -- Southern Living image

This is very light and yummy. Serve with Lemon Herb Dressing with Mine and Tarragon, also posted in my recipes. From Southern Living

8 ounces uncooked medium-size shell pasta
3/4 cup lemon-herb dressing with mint and tarragon
1 lb medium cooked shrimp (peeled and deveined)
1 large nectarine, cut into thin wedges
1 cup chopped seedless cucumber
1/4 cup fresh raspberry (optional)
1/2 cup fresh arugula (optional)

Steps:

  • Cook pasta according to package directions; drain.
  • Plunge into ice water to stop the cooking process; drain and place in a large bowl.
  • Add 1/2 cup dressing, tossing to coat.
  • Stir in shrimp, nectarine, and cucumber.
  • Serve with remaining 1/4 cup dressing.
  • Garnish, if desired.
