Simple French Coconut Pie image

Someone gave me this recipe more than 30 years ago and it is an all time favorite in our home. This is one of the best coconut pies you will ever have and without a doubt the easiest to make. Everything mixes in one bowl, pour into a pie pan and bake. The pie even makes it's own crust. Enjoy!

Number Of Ingredients 7

4 eggs
2 c whole milk
1/4 c butter, softened
1 1/2 c sugar
1/2 c self-rising flour
1 1/2 c coconut, shredded
1 2/3 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Grease and flour a 9" pie pan
  • 3. In a large mixing bowl add all ingredients listed
  • 4. Mix well, batter will have texture from butter and coconut.
  • 5. Pour into prepared pie pan
  • 6. Bake at 350 degrees for 45 minutes or until a knife inserted comes out clean.
  • 7. Cool before serving.
