Slow Cooker Chicken and Artichokes in Garlic Lemon Alfredo Sauce image

I was looking for a comfort food that I did not have to attend to while my family was skiing. The lemon gives this dish a fresh twist. I served this over pasta and sprinkled with grated cheese.

I'm not a big fan of artichokes, but I really enjoyed them in this dish. The flavor was subtle and not overpowering.

This recipe is a great way to use up leftover chicken. I had some roasted chicken from a previous meal and it worked perfectly in this dish.

I served this dish over pasta, but I think it would also be good served with rice or mashed potatoes.

This dish is so easy to make! I just threw all the ingredients in my slow cooker and let it cook on low all day. When I came home from work, dinner was ready!

I added a cup of shredded mozzarella cheese to the sauce before serving. It melted perfectly and made the dish even more decadent.

I substituted Greek yogurt for the heavy cream in the sauce to make it a little healthier. It turned out great! The sauce was still creamy and flavorful, but it wasn't as heavy.

I wasn't sure how the artichokes would taste in this dish, but I was pleasantly surprised. They added a nice briny flavor that complemented the chicken and sauce perfectly.
