This sauce is great on any roasted pork, but is best on pork tenderloin.

Time 15m

Number Of Ingredients 6

1/4 c red wine vinegar
3 Tbsp dark brown sugar
2 garlic cloves, minced
1 1/2 c beef broth
1/3 c tamarind paste
1 tsp fresh ginger, grated

Steps:

  • 1. In a medium saucepan, bring vinegar, brown sugar, and garlic to a low boil, whisking until brown sugar has completely dissolved. Boil, stirring often, until liquid is reduced by half; liquid will be a syrup at this point.
  • 2. Lower heat to a simmer and whisk in the beef broth. Whisk in the tamarind paste. Stir in ginger and simmer to let sauce reduce a little more.
  • 3. Pour sauce through a sieve into a serving bowl. Spoon over sliced pork tenderloin.

This sauce is okay. It's a bit too sweet for my taste, but it's still good. I think I'll try adding some chili powder next time to give it a bit more of a kick.

The tamarind sauce was a bit too spicy for my taste, but it was still good. I think I'll try using less chili powder next time.
