SOUFFLES DE CAROTTES AU GOUDA AU CUMIN image

1 recipe (400 g) carottes
1 recipe (100 à 150 g) gouda au cumin
1 recipe (10 cl) crème fraiche liquide
1 recipe (4) oeufs entiers
1 recipe (/) sel et poivre du moulin
1 recipe (pour le plat à soufflé) beurre

Steps:

  • Faire cuire les carottes à la vapeur. Les mixer en purée une fois cuites.
  • Mélanger les carottes avec le gouda au cumin râpé. Incorporer dans la préparation la crème fraiche liquide ainsi que les 4 jaunes d'oeufs. Battre les 4 blancs d'oeufs en neige ferme avec une pincée de sel fin.
  • Mélanger délicatement la préparation aux carottes avec les blancs d'oeufs, rectifier l'assaisonnement si nécessaire.
  • Verser le tout dans un plat rond à bords hauts préalablement beurré. Ne pas remplir à plus de trois quart de la hauteur pour que le soufflé ait suffisamment de place pour gonfler.
  • Mettre au four chaud (environ 180°C - thermostat 6) pour environ 20 minutes. Attendre quelques minutes après la sortie du four pour déguster.
  • Servir en accompagnement de magrets de canards par exemple et d'une salade de trévise pour le croquant. Bon appétit!
