Steps:
- Faire cuire les carottes à la vapeur. Les mixer en purée une fois cuites.
- Mélanger les carottes avec le gouda au cumin râpé. Incorporer dans la préparation la crème fraiche liquide ainsi que les 4 jaunes d'oeufs. Battre les 4 blancs d'oeufs en neige ferme avec une pincée de sel fin.
- Mélanger délicatement la préparation aux carottes avec les blancs d'oeufs, rectifier l'assaisonnement si nécessaire.
- Verser le tout dans un plat rond à bords hauts préalablement beurré. Ne pas remplir à plus de trois quart de la hauteur pour que le soufflé ait suffisamment de place pour gonfler.
- Mettre au four chaud (environ 180°C - thermostat 6) pour environ 20 minutes. Attendre quelques minutes après la sortie du four pour déguster.
- Servir en accompagnement de magrets de canards par exemple et d'une salade de trévise pour le croquant. Bon appétit!
