Southwest sausage casserole image

We have this every Christmas or whenever companies here for breakfast. Its easy to make and great to make the day before as the flavors mingle. I even make ahead and keep in the freezer.

Number Of Ingredients 7

3-4oz. can(s) chopped green chilies
6 corn tortillas cut in 1/2 " strips
1 lb ground sausage-cooked and drained
2 c monterey jack cheese
1/2 c milk
8 large eggs
1/2 tsp each of salt, garlic powder, onion salt,cumin, and black pepper

Steps:

  • 1. Grease 9/12 pan. Layer 1/2 of the following-chilies, tortillas, sausage and cheese-repeat. Combine eggs, milk and seasonings, pour over mixture. Sprinkle with paprika, cover with plastic wrap and refrigerate til ready to bake. Bake at 350 for 45-55 minutes. Serve with sour cream and salsa.
