1 (16 ounce) package bulk pork sausage with sage
6 flour tortillas, cut into 1-inch squares
4 (4 ounce) cans chopped green chilies
2 cups shredded Monterey Jack cheese
10 eggs
½ cup milk
½ teaspoon salt
½ teaspoon garlic salt
½ teaspoon onion salt
½ teaspoon ground black pepper
½ teaspoon ground cumin
2 tomatoes (or to taste), sliced

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Grease a 10x9-inch baking dish. Layer half the tortilla pieces into the bottom of the prepared dish; top with 2 cans green chilies, half the cooked sausage, and half the cheese, respectively. Repeat layering.
  • Beat eggs, milk, salt, garlic salt, onion salt, black pepper, and cumin together in a bowl; pour over the layers in the baking dish.
  • Cover baking dish with plastic wrap and refrigerate 8 hours to overnight.
  • Remove dish from refrigerator and let warm at room temperature for 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).

10 eggs
2 cups milk
2 teaspoons chili powder
1 teaspoon ground cumin

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray. In 10-inch nonstick skillet, cook sausage over medium-high heat 5 to 7 minutes, stirring frequently, until no longer pink; drain and set aside. Reduce heat to medium. In same skillet, cook bell pepper 3 to 5 minutes or until tender.
  • In baking dish, layer half of the French bread, 1 1/2 cups of the cheese, the bell pepper, green onions, tomatoes, chopped green chiles, sausage and remaining bread. 1 pound breakfast sausage
1 large onion diced (diced)
1 red bell pepper (diced)
2 cloves garlic (minced)
10 eggs
1 cup milk
1/2 cup heavy cream
4 ounces green chiles (drained)
1/2 teaspoon kosher salt
1 cup salsa
6 cups cubed French bread ((see note))
2 1/2 cups Colby Jack cheese (cheddar cheese would also work well here)

Steps:

  • Preheat your oven to 350 degrees. Spray a 9 by 13 inch casserole dish with cooking spray.
  • In a large skillet, cook the breakfast sausage, breaking it up. Cook just until it is begins to brown.
  • Add the onion, bell pepper, and garlic to the meat. Cook, stirring occasionally, until the onions are translucent, about five to seven minutes.
  • While the vegetalbes are cooking, whisk the eggs. To the eggs, add milk, heavy cream, green chiles, salsa and salt. Then stir in 1 1/2 cup cheese, and the bread. Mix to combine.
  • When the vegetable and meat mixture is ready, drain the excess grease from the pan, and add it to the egg mixture. Pour everything into the prepared pan and top with 1 cup cheese.

1 (8 ounce) can crescent rolls
1 lb bulk pork sausage (Jimmy Dean Hot Breakfast Sausage)
1/2 cup white onion, chopped
2 (4 ounce) cans diced green chili peppers
1/4 cup salsa
1/4 teaspoon garlic powder
1 1/2 cups monterey jack pepper cheese, grated
1 1/2 cups sharp cheddar cheese, grated
1/4 cup green onion, chopped
3 tablespoons cilantro, snipped
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
6 -8 eggs
sour cream, to serve
