SOUTHWESTERN BEEF CHILI WITH CORN image

Number Of Ingredients 13

1 T. olive oil
2 T. cayenne pepper
15 baby carrots, chopped
1 medium onion, chopped
1 green pepper, chopped
1/2 lean ground beef
2 T. tomato paste
1 15 oz can black beans, drained and rinsed
3 c. water
1 T. chili powder
Dash Salt
Dash Pepper
3/4 c. corn kernels

Steps:

  • 1. Heat oil in large saucepan over medium-high heat. 2. Add cayenne, carrots, onion, and pepper - cook 6 min 3. Meanwhile, brown hamburger. 4. Add to vegetable mixture and cook 2 min 5. Add tomato paste and cook 2 min 6. Add beans, chili powder, water,salt, and pepper 7. Simmer over medium heat until warmed through 8. Stir in corn and cook for 2 min
