SPICED BEEF image

Number Of Ingredients 6

6 pounds (or less) of bottom round (or any other good cut).
1 cup dark brown sugar, divided
1 cup coarse sea salt
1/3 cup black peppercorns
1/3 cup whole allspice
1/3 cup whole juniper berries

Steps:

  • Put beef in a crock and rub it all over with 1/2 cup brown sugar; chill overnight. Repeat next day. On day three, crush or food process the sea salt, peppercorns, allspice and juniper berries. Rub the meat with this mixture. Continue to chill it, rubbing and turning it for 10 days. When you ar about to cook the beef, wipe off the spices (or keep some of them on, which makes it more pastrami-like) and put it in a casserole into which it just fits. Pour in a cup of water, put a piece of wax paper under the lid and roast the meat at 29o degrees. for 5 hours. Leave the beef to cool in the juice. Then take it out, wrap it in wax paper and place it on a board. Place another board on top of it, weight it with about 5 pounds (tin cans do nicely) and chill it overnight.
