Spicy Chuck Wagon Beans image

1 tablespoon canola oil
1 medium onion, chopped
2 cans (28 ounces each) baked beans
3 cans (15 ounces each) chili beans, undrained
2 cans (15 ounces each) black beans, rinsed and drained
2 packages (7 ounces each) frozen fully cooked breakfast sausage links, thawed and cut into 1/2-inch pieces
1 cup beer or reduced-sodium chicken broth
2 chipotle peppers in adobo sauce, minced
1 to 2 tablespoons hot pepper sauce

Steps:

  • In a Dutch oven, heat oil over medium-high heat; saute onion until tender, 3-5 minutes. Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, until beans are thickened and flavors are blended, about 15 minutes, stirring occasionally.
