Spicy Southwest Baked Beans image

Great side for your favorite burger! You may substitute 2 cans of black beans for the pinto beans, or use 1 can of each! From 1001 Low-Fat Recipes.

1 cup chopped onion
1/2 cup chopped green bell pepper
1 jalapeno pepper, chopped
2 garlic cloves, chopped
1 tablespoon olive oil
2 (15 ounce) cans pinto beans, rinsed and drained
1/2 cup beer
1/4 cup sliced sun-dried tomato, softened
1/4 cup light brown sugar, packed
1 teaspoon cumin
1/2 teaspoon dried thyme leaves
1 bay leaf
1/2 teaspoon salt

Steps:

  • Saute onion, bell pepper, chili and garlic in oil in large skillet until tender, about 8 minutes.
  • Combine onion mixture and remaining ingredients in 1 1/2 quart casserole.
  • Bake at 350 degrees, covered, 30 minutes.
  • Uncover and bake 15-20 minutes or until liquid is nearly absorbed.
  • Discard bay leaf.
