Spinach Pasta Salad - Taste of Home image

This was contributed by Ruby Pyles in the 1999 Taste of Home Annual Recipes. I am posting so I don't have to keep looking thru 12 books to find it! I usually prepare the dressing first so it can "develop" while chopping the rest of the salad. Also, this salad does not hold well so serve it soon after mixing with dressing.

Number Of Ingredients 15

4 cups torn fresh spinach
4 cups cooked spiral shaped pasta (or to taste)
4 cups cubed cooked chicken
2 1/2 cups sliced celery
2 cups green grapes, halved
1 cup fresh snow pea
1 medium tomatoes, chopped
3 green onions, sliced
1/2 cup vegetable oil
1/4 cup sugar
2 tablespoons vinegar
2 tablespoons minced parsley
1 teaspoon salt
1 teaspoon lemon juice
1/2 teaspoon finely chopped onion

Steps:

  • In a large bowl, combine the first eight ingredients.
  • In a small bowl, whisk together dressing ingredients.
  • Pour dressing over salad and serve immediately.
