Spinach Stuffed Salmon image

4 pieces Salmon Filets skinned
1 tablespoon Olive Oil
1 teaspoon Cajun Seasoning
3 ounces Cream Cheese
1/2 cup Mozzarella Cheese
1/2 cup Feta Cheese crumbles
3 ounces Baby Spinach fresh

Steps:

  • FOR STUFFING: Place the cream Cheese, Feta and mozzarella into a med. bowl. Roughly chop the spinach and add to the cheese. With your hands, massage the spinach and cheese until it looks like a thick paste.
  • FOR THE SALMON: Cut a pocket in the center of each salmon fillet. Generously season with Cajun seasoning and brush them with olive oil on both sides.
  • Divide the spinach stuffing into 4 equal parts and spoon into the pockets. Bake in a preheated 400*F for 15 to 20 minutes.
