My husband ate most of these by himself, he LOVED them! You can make them with yellow squash or zucchini .

Time 35m

Number Of Ingredients 7

3 or4 medium yellow squash, cut in 1/2 inch rounds
1/4 c cup heaping ,shredded parmesan cheese
1/4 c heaping, panko bread crumbs
1/4 tsp kosher salt
2 tsp olive oil
freshly ground pepper to taste
PREHEAT OVEN TO 400

Steps:

  • 1. Coat squash slices with olive oil.
  • 2. In a bowl, combine Parmesan cheese, panko bread crumbs, salt and pepper.
  • 3. Add squash slices to cheese mixture, I did it one by one, then placed on a Pam sprayed foil lined cookie sheet. Top slices with remaining cheese. Bake 30 minutes, no need to turn, they crisp up on both sides by themselves.

I'm not a big fan of squash, but I actually really liked these chips. They're a great way to sneak some vegetables into your diet.

These chips are a great way to get kids involved in the kitchen. They're easy to make, and kids love helping to cut the squash and stir the ingredients.

I'm going to try making these chips with different types of squash. I think they would be really good with butternut squash or zucchini.

I think these chips would be better if they were served with a dipping sauce. I'm going to try them with some ranch dressing next time.

I was really excited to try these chips, but I was disappointed. They're not as crispy as I thought they would be, and they don't have much flavor.

These chips are a great idea, but they're a little too bland for my taste. I think I'll try adding some more spices next time.

I followed the recipe exactly, but my chips didn't turn out as crispy as I would have liked. I'm not sure what I did wrong.

These chips are a bit too salty for my taste. I think I'll use less salt next time.
