Steak:
1 tbsp brown sugar
1 tsp salt
3/4 tsp ground cumin
3 garlic cloves, minced
1.5 lb flank steak, trimmed
Cooking spray
Chutney:
2 peeled ripe mangoes, each cut into quarters (about 1 lb)
1 tsp extra virgin olive oil
1 cup thinly vertically sliced onion
1 tbsp minced peeled fresh ginger
1/3 cup cider vinegar
2 tbsp brown sugar
2 tbsp fresh lime juice
1/4 tsp salt
1/4 tsp ground red pepper

Add onion; saute 4 minutes. Add ginger; saute 1 minute. Add vinegar, 2 tbsp sugar, juice, 1/4 tsp salt and pepper; cook 5 minutes or until liquid almost evaporates. Stir in mango; cook 1 minute. Remove from heat. Stir in watermelon, cilantro and mint. Add mint sprigs and lime wedges, if desired for presentation.

I'm always looking for new ways to cook steak, and this recipe definitely delivered. The steak was tender and flavorful, and the chutney added a nice touch of sweetness.

This dish was a little too spicy for me, but my husband loved it. I'll probably make it again with less cayenne pepper next time.

I'm not a huge fan of mango chutney, but I thought I'd give this recipe a try. I was pleasantly surprised! The chutney was actually really good and paired well with the steak.

This recipe is a great way to use up leftover steak. I had some flank steak that I grilled the night before, and it worked perfectly in this dish.
