Strawberry Pineapple Pie ( Kat) image

My niece was wanting a pie, so I had to see what I had on hand , strawberries, crushed pineapple and cream cheese, yep sounded good

Number Of Ingredients 7

1 pie crust shell ( i used ready to bake, graham cracker would be good too)
8 oz cream cheese, room temperature
1 can(s) crushed pineapple (small can)
1 c fresh strawberries ( diced)
10 strawberries ( sliced for garnish, optional)
1/2 c sweetened condensed milk
1 pkg gelatin, unflavored or strawberry

Steps:

  • 1. If using a ready to bake crust, bake as directed and let cool. In a bowl mix together cream cheese, diced strawberries, crushed pineapple, gelatin and condensed milk, until well blended.
  • 2. Pour into pie shell, place sliced strawberries on top ( optional) and chill in fridge for 3+ hours

I love this pie! It's so easy to make and always a crowd-pleaser. I like to use fresh strawberries and pineapple when they're in season, but frozen fruit works well too. I also like to add a little bit of lemon zest to the filling for an extra zing.
