Strawberry Tofu Spread image

Fruity and good on bagels, toast or as a unique sandwich spread (I like it spread on toasted pumpernickel, spinkled with sliced almonds topped with baby spinach, sliced fresh strawberries and gruyere). Serving size is ~ 3 Tablespoons

Number Of Ingredients 4

12 ounces firm tofu, drained
8 tablespoons strawberry preserves, all fruit type like polaner
2 tablespoons honey
2 teaspoons lemon juice

Steps:

  • Combine all ingredients in a food processor and blend until smooth.
  • Scoop mixture into a container for storage in the refrigerator.
  • Use within 2 weeks.
