String Beans with White Potatoes image

I take alot of pictures when Im cooking, so I decided to share my dinner today. I hope you like it. I DID ; )

Number Of Ingredients 7

3 slice bacon, uncooked cut into pieces
1 1/2 c water to half cover beans
1/4 small onion
4 c string beans (cleaned snapped in 2 in. pieces)
dash(es) salt and pepper ( to your taste )
DO NOT ADD POTATOES TILL BEANS ARE TENDER
2 medium potatoes cut to medium chunks : )

Steps:

  • 1. in a 2.5 quart pot add water, bacon, salt & pepper, onion
  • 2. bring to a roaring boil 5 min. add beans
  • 3. reduce heat to low simmer for 30 min. check beans for tenderness
  • 4. when beans are tender, ADD POTATOES again, salt and pepper to taste
  • 5. simmer till potatoed are tender ENJOY! . . . . . .with " Down Home Flap-Jacks " ( see my recipes )

I followed the recipe exactly and the dish turned out great! The only thing I would change is to add a little bit more salt and pepper to taste.

This dish was a disappointment. The green beans were overcooked and the potatoes were mushy. The bacon was also too salty.

I've made this dish several times and it's always a winner. The only thing I do differently is add a little bit of garlic powder to the potatoes. It gives them a nice extra flavor.
