Summer Chicken Salad image

easy, enjoyable, summer lunch

Number Of Ingredients 11

1 1/2 c cooked, cubed chicken
3 oz water chestnuts, thinly sliced, about 1/2 cup
1/2 c seedless grapes
2 Tbsp chopped celery
1/3 c low calorie mayo
2 Tbsp white wine vinegar
1 Tbsp soy sauce
1 tsp curry powder
1 tsp ground ginger
1 tsp grated onion
lettuce leaves

Steps:

  • 1. Combine chicken, water chestnuts, grapes and celery in small bowl and then mound on salad plate lined with lettuce leaves.
  • 2. Stir together the remaining ingredients and pour over salad.
