This recipe and photo comes from the All Recipe site. I was looking for salad ideas and found this delicious and easy recipe. Only 89 calories. Great for a appetizer, salad and perfect for those warm weather months or anytime you want something fast and easy yet so good healthy for you. Enjoy!

8 honeydew melon balls
16 salami pcs, or slices
24 baby arugula leaves
8 bamboo toothpicks

Steps:

  • 1. Thread 1 melon ball, 2 slices salami, and 3 arugula leaves, respectively, onto a toothpick. Repeat with remaining toothpicks.
  • 2. **** For another idea- try adding watermelon chunks to this recipe.

These were okay, but not great. The flavors were a bit bland and the dressing was too thin. I wouldn't make these again.

I tried this recipe and it was a disaster. The skewers were difficult to assemble and the dressing was too oily. I would not recommend this recipe.
