Summertime Cucumber and Cottage Cheese Salad image

My grandmother used to make this healthy summertime salad to help use up extra cukes from the garden. My husband works outside and loves coming home to this during the heat of the summer. The cottage cheese and mayo can be subbed with low fat for a healthier version.

I'm not a big fan of cottage cheese, but this salad was surprisingly good! The cucumbers and dill really helped to balance out the flavor of the cheese.

So refreshing and delicious! The cucumbers were crisp and the cottage cheese was tangy. I liked the addition of the dill and mint, which gave it a nice herbaceous flavor. I will definitely be making this salad again this summer.

This salad was a hit at my last picnic! I used fresh cucumbers from my garden and the cottage cheese gave it a nice creamy texture. I also added some chopped red onion for a little extra crunch and flavor. Will definitely be making this again!
