This dish is a great way to get your kids to eat their vegetables. My kids loved the pesto, and they ate all of their rice without complaining.

I used a store-bought pesto for this recipe, and it turned out great. I'm sure it would be even better with homemade pesto, but I didn't have the time.

I was skeptical about how well the rice would cook in the Instant Pot, but I was pleasantly surprised! The rice came out perfectly fluffy and tender. The pesto was also very good, with a nice balance of flavors.
