Super Simple Deviled Eggs image

Some people like to add cayenne pepper, some like sweet pickles, but this is my favorite way to make these. Note, for easy to peel eggs, don't buy and boil the same day. Let them hang out in the fridge for 2-3 days. I'm not sure why, but it seems to work for me.

12 eggs
1/2 to 3/4 c mayonnaise
1 tsp salt
1 tsp black pepper
1 tsp mustard powder
paprika
2 Tbsp grated then chopped dill pickle (optional)

Steps:

  • 1. Hard boil the eggs Place 1 dozen eggs in a pan so they all sit on the bottom. Cover with water and bring to a boil. Once boiling, turn off the burner, and cover the pan. Let sit for 20 minutes. After 20 minutes, gently pour off the hot water and cool eggs under running cold water.
  • 2. Once eggs have cooled, peel and cut in half.
  • 3. Place egg yolks and all the other ingredients into a zipper bag. This makes for the easiest mixing, clean up and it is a piping bag!!
  • 4. Squish all the ingredients around in the bag until well mixed. Once well mixed, taste and add salt, pepper or mayo as necessary.
  • 5. Squeeze all the mixture into the corner of the bag, cut a small hole in the corner and pipe into each empty white half. Sprinkle with paprika to garnish
  • 6. If you are going to a party, don't fill the eggs until you get there. It's much easier that way. Sometimes I add dill pickle. If you choose to, grate, then chop them very fine.
