Sweet and Sour sausage Casserole image

I like mixing fruit and vegetables together and sometimes meat as well..either chicken, shrimp or sausages and serving this as a side.

Number Of Ingredients 11

1 lb fully cooked sausages cut in 1/2 inch slices
1 medium onion, chopped
1 medium green pepper cut into 1/2 inch pieces
1 medium red pepper cut same as green pepper
1 can(s) {14-1/2 ounce diced tomatoes undrained
1/2 c beef broth, reduced sodium
2 Tbsp brown sugar
1/4 tsp garlic powder
1 can(s) {20 ounces pineapple chunks
2 Tbsp cornstarch
hot cooked rice

Steps:

  • 1. In a skillet in 2 tbsp oil cook the sausage, onion and red and green peppers are slightly tender add the tomatoes, broth, and garlic powder, and drained pineapple, cook 5 minutes..combine the pineapple juice and cornstarch and mix until well blended. cook stirring for 5 minutes or until sauce has thickened, serve over cooked rice.
