Swiss Chicken Quiche image

I've never been much of a fan of quiche but a friend made this for a potluck at work and so I tried it not wanting to hurt her feelings. I have to admit, I was pleasantly surprised to find the flavor delightful, comforting and wanting seconds. It's so quick and easy and I'm sure your taste buds will be asking for seconds also.

1 9 inch pie shell, unbaked
1 c swiss cheese, grated
2 Tbsp flour
1 Tbsp chicken bouillon granules
2 c cooked and cubed chicken breast
1 c milk
3 eggs, well beaten
1/4 c finely chopped onion
2 Tbsp chopped green pepper
2 Tbsp chopped pimento (optional)

Steps:

  • 1. Preheat oven to 425 degrees. Bake pie shell 8 minutes (quick shell) Remove from oven and set aside. Reduce oven temperature to 350 degrees.
  • 2. In medium bowl, toss cheese, flour and bouillon; Add remaining ingredients. Mix well. Pour into pie shell and bake 40-45 minutes until pie is set.
  • 3. I also use monterey jack/cheddar mix and I use 1 1/2-2 cups cheese instead of 1 cup.
