TEX-MEX SALAD WITH CREAMY LIME DRESING image

Yield 4-6 servings

Number Of Ingredients 20

1 can black beans, drained and rinsed
1 packet Sazon seasoning
8 oz M Jack cheese, shredded
1 c salsa
1 c halved cherry tomatoes
1 lb grilled chicken breasts, cubed
8 oz cheddar, shredded 5-6 strips pepper bacon, diced
1 avocado, cubed
1 head romaine, cut in strips
1 pkg tortilla salad strips
CREAMY LIME DRESSING:
2 T chopped cilantro
1 T red wine vinegar
1 t lime zest
1/2 c sour cream
1 garlic clove, smashed
1 T honey
1/2 c olive oil

Blend all ingredients.

Steps:

  • Mix beans with Sazon; season with s&p Toss salsa with tomatoes Toss lettuce with 3/4 c dressing In clear trifle dish, layer the salad, beginning with black beans, followed by M Jack cheese, chicken, tomato salsa mixture, Cheddar, bacon, avocado, lettuce. Top with tortilla strips. Serve remaining dressing on the side.
