Steps:
- 1. Combine 1 cup monterey jack cheese, 1 cup cheddar cheese, cream cheese, 1/4 c. enchilada sauce, green pepper, onions and cumin. Mix well.
- 2. Spoon 1/4 cup of the cheese mixture down the center of each tortilla. Roll and place seam side down in a 9 x 13" baking dish.
- 3. Spoon 3/4 cup of the enchilada sauce even over the enchiladas. Cover enchiladas with the remaining cheese. Bake at 350º for about 20 minutes or until hot. Top with lettuce and chopped tomatoes.
