Steps:
- Method: Pre-heat oven to 350 F. Butter and flour a 10" diameter spring-from pan (a bread loaf pan will do) Sift the first 6 ingredients into a suitable bowl. Combine sugar, oil, molasses, water, eggs, and fresh ginger in a large bowl: wisk to blend. Mix in crystalized ginger then stir in dry ingredients. Pour the batter into a prepared pan. Bake until tester inserted into center of cake comes out clean. Cool for an hour prior to removing from pan. Cake might fall a bit in the center. Often eaten warm with ice cream.
