Tilapia with Almond Crust image

Nice firm whitefish, with a browned nut crust. For variation, use macadamias or pecans. Any firm white fish would work, i.e. red snapper. I like to use tilapia "loins".

Time 45m

Number Of Ingredients 10

3/4 c dry bread crumbs
3/4 c finely chopped almonds
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp ground black pepper
1 c buttermilk
1/2 c all purpose flour
4 tilapia fillets (about 6 oz. each)
2 Tbsp oil
4 lemon wedges, for serving

Steps:

  • 1. Combine bread crumbs, almonds, salt, garlic powder and black pepper in a shallow dish.
  • 2. Pour buttermilk in another shallow dish.
  • 3. Pour flour on a sheet of wax paper.
  • 4. Rinse the fillets with water and pat them dry with paper towels. Dredge the fillets in the flour, then dip them in buttermilk. Dredge them in the almond mixture. Place the fillets on a small cookie pan that has been dusted with a bit of the almond mix and chill for about 20 minutes for the almond crust to set.
  • 5. Heat one tablespoon of oil in a skillet over medium-high heat. Add two fillets, cook them about three minutes on each side until they are browned and the fish flakes when tested with a fork.
  • 6. Remove them to a platter to keep warm. Add the remaining tablespoon of oil to the skillet and cook the remaining fillets. If you have a large skillet, you can do all four at once.
  • 7. Serve with lemon wedges.

I'm not sure what I did wrong, but my almond crust didn't turn out crispy. It was more like a soggy mess.

Overall, I thought this dish was just okay. It wasn't bad, but it wasn't anything special either.

The almond crust was a great idea, but it didn't adhere to the fish very well. I ended up with a lot of almonds on the bottom of the pan.

This dish was a bit bland for my taste. I think it could have used more seasoning or a sauce.

The tilapia was moist and flaky, and the almond crust added a nice crunch. I liked that the recipe was easy to follow and didn't require any special ingredients.
