Steps:
- Melt butter in saucepan. Add jar of oysters including liquid plus 1/2 cup water. Poach oysters until firm. Remove from fire, cool slightly, add chopped spinach and place entire mixture in blender. Belend until very smooth. In the meantime, bring half and half to a boil. Add oyster and spinach mixture to half & half, but do not boil. Thicken with the cornstarch and water mixture. Add all seasonings and salt and pepper to taste. To serve: Top each individual serving in bowl with one heaping Tbs. whipped cream and slip under broiler for a few seconds until cream settles and is golden brown.
