Tropical Chicken and Rice image

New Orleans Creole cooking was heavily influenced by Caribbean cuisine. This recipe pays homage to those Caribbean roots with Zatarain's Caribbean Rice Mix, chicken, pineapple, mango and banana all mixed perfectly together in this easy, one-pot meal.

1 tablespoon vegetable oil
1 pound boneless, skinless chicken breasts, cubed
2 ½ cups water
2 tablespoons butter
1 (6 ounce) package ZATARAIN'S® Caribbean Rice Mix
1 cup cubed fresh mango
1 cup canned pineapple cubes
½ cup chopped banana
2 tablespoons chopped fresh cilantro, or more to taste

Steps:

  • Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 4 minutes or until browned. Remove chicken; set aside.
  • Add water and butter to same skillet; bring to boil. Stir in Rice Mix; return to boil. Reduce heat to low; cover and simmer 15 minutes. Add chicken; mix well. Cover and cook additional 10 minutes or until rice is tender. Remove from heat. Let stand 5 minutes.
  • Add mango, pineapple, banana and cilantro; mix lightly.

This dish was a bit bland for my taste. The chicken was a bit dry and the rice was a bit mushy. I think I would add more spices next time.
