ULTIMATE TRI-TIP image

Number Of Ingredients 7

6 cloves of garlic, chopped
1/4 cup oil
4 teaspoons kosher salt
1/2 teaspoon whole black
peppercorns
1 (2-2 1/2pound)whole tr-tip
roast with thin fat layer

Steps:

  • 1. In a blender grind the garlic,oil, salt and pepper( may need to grind the peppercorns in a pestle) 2.Pat the meat dry with a paper towel and score the fat layer with a sharp knife. Careful not to cut the meat.Place the meat in a ziploc bag, scrape in the paste, press out the air and seal. Massage the paste until it is evenly coating the meat. Set aside at room temp for at least 1 hour or if longer refrigerate. Be sure to take it out 1 hour in advance. 3. About 1 hour before serving, start the fire.Push the coals over to one side when they are ready. 4.Sear the fat side directly over the flame for 3-4 minutes.Turn and do the same on the other side. 5. Move the meat to the cool side of the grill and cook approx 25 minutes for med-rare. 6.Let the meat rest at least 10 minutes. Carve against the grain.
