From Vegan Dad's blog: http://vegandad.blogspot.com/2008/10/fresh-vegan-pasta.html. I've made this a few times (though I use spelt flour rather than semolina): the first time adding dill and making a chickenless noodle soup; the second time I added herbs of provence and made a pasta salad; and most recently I served with Recipe #432028. I love this pasta!

Steps:
- Mix together dry ingredients in large mixing bowl until well-incorporated. Make a well in the center of the flour and add the water, mixing until a rough dough forms.
- Turn out on a lightly floured surface and knead until smooth and slightly elastic, adding more water if dough is too dry and tears or cracks.
- Form a log and wrap in a damp towel. Allow dough to rest for 20 minutes.
- Roll and cut according to your pasta machine's specifications.
