Vichyssoise image

Number Of Ingredients 6

4 cups water
1 pound red potato peeled and cut in 1/2 " cubes (about 2 cups)
3 onions medium, chopped
6 teaspoons chicken bouillon
1 cup heavy cream
2 teaspoons chives minced fresh

Steps:

  • 1. In a large saucepan place water, potatoes, onions and bouillon. Bring to a boil reduce heat, cover and simmer for 30 to 40 minutes or until vegetables are tender. Place half at a time in a blender container or a food processor bowl cover and blend or process until smooth. Cover and chill overnight.2. Stir in heavy cream and chives. Serve in chilled bowls.
