2 lb green beans, whole & fresh
1/2 c walnut pieces
1 medium onion, sliced in strips lenghtwise
6 slice bacon, cut in 1/2 inch pieces (easier to cut if partially frozen)
1/2 tsp salt
1/2 tsp sugar
1-2 tsp Worcestershire sauce or soy sauce (I prefer Worcestershire; use 1 tsp for soy sauce)
1 tsp Tony Chachere's seasoning or your own Creole seasoning

Steps:

  • 1. Rinse beans, drain, and snip off stems ONLY.
  • 2. Place in saucepan and cover with water. Add salt and sugar. Bring to a boil over medium heat and cook for 3 minutes.
  • 3. Remove from heat and IMMEDIATELY bathe in cold water. Drain. Set aside.
  • 4. On medium fire, heat large skillet. Cook bacon until fat has covered the bottom of pan.
  • 5. Add walnut pieces and onion strips to the bacon and continue cooking until the bacon is crisp and onions are beginning to turn clear.
  • 6. Add green beans to the mixture, sprinkle with soy sauce OR Worchestershire sauce, and Tony's Seasoning. Using a spatula, gently scoop and turn veggies until well blended.
  • 7. Continue cooking over LOW heat for about 5 minutes. The beans should remain firm.
  • 8. Serve on a platter, arranging beans all in the same direction. Spoon bacon, walnut, and onion mixture on the top and around the edges. Use tongs for serving.
