Whole Wheat Bread image

Number Of Ingredients 9

2 pkg yeast
1 c water, warm
1 tsp sugar
4 c milk
3/4 c shortening (lard or oil)
1 1/2 c brown sugar, firmly packed
4 c whole wheat flour
2 eggs, beaten
2 tsp salt

Steps:

  • 1. Soak yeast in warm water with sugar.
  • 2. Heat milk. While hot, pour over shortening, brown sugar, and whole wheat flour. Let stand until lukewarm.
  • 3. Add 2 beaten eggs, and 2 tsp. salt. Then the yeast mixture.
  • 4. Gradually add 8-10 cups white flour. Knead well. Let rise until double in bulk. Punch down and let rise again.
  • 5. Put into 4 well greased bread tins. Let rise until just above rim of pans.
  • 6. Bake in a pre-heated oven at 350 degrees for 45 minutes. Grease tops with butter while still hot.

The bread was easy to make and the instructions were clear. However, the bread did not rise as much as I expected it to. The flavor was good, but it was a bit dry. Overall, I would say this recipe is a good starting point, but it needs a few tweaks.
