WHOLE WHEAT CRANBERRY-ORANGE MUFFINS image

Yield 12 Muffins

Number Of Ingredients 13

1 tbsp trans-free margarine or butter melted
1/2 cup packed brown sugar
1/2 tsp ground cinnamon
2 cups whole wheat flour or whole grain pastry flour
2 tsp baking powder
1/4 tsp baking soda
1/2 cup granulated sugar
3 tbsp grated orange zest
1 cup orange juice
1/2 cup unsweetened applesauce
2 lightly beaten eggs
1 cup fresh cranberries, chopped
1/2 cup finely chopped walnuts (optional)

Steps:

  • Put ingredients into bowl and mix. Separate and put into muffin makers Put in oven for 15 minutes
