WILD RICE WALDORF SALAD image

Number Of Ingredients 8

2 cups - cooked wild rice (1/2 cup uncooked)
2 - large apples
1 Tbsp - lemon juice
1 Tbsp - brown sugar
2 ribs - celery, sliced
1/3 cup - mayonnaise
1/2 cup - dairy sour cream
lettuce

Steps:

  • Chill the cooked wild rice. Dice the un-pared apples and toss with a mixture of the lemon juice and brown sugar. Stir in the celery and wild rice. Blend the mayonnaise with the dairy sour cream and toss into salad ingredients, mix well. Chill thoroughly, but no longer than 6-8 hours. Serve on lettuce.

Easy to make and delicious! I used a store-bought rotisserie chicken and it turned out great. The dressing is simple but flavorful. I will definitely be making this again.

I'm not usually a fan of Waldorf salad, but this recipe changed my mind. The wild rice adds a nice nutty flavor and the dressing is light and refreshing. I'll be making this again for sure!
